Tropical Traditions~ Virgin Coconut Oil *Review and #Giveaway* US & Canada! 11/28


I have seen Tropical Traditions products on numerous blogs with great reviews and I couldn't help but be curious. I contacted Tropical Traditions to request a product for review so I could see for myself. I was sent a 32 oz jar of Gold Label Virgin Coconut Oil for review. I had never used coconut oil before so I did some research and found some great recipes in their coconut oil recipe section.
My family loves carrots so I tried out the Coconut Oil Sauteed Carrot recipe.

It was super easy to make and only requires a few ingredients. The coconut oil melts almost instantly and is ready to be cooked in, in no time. I served this as a side with tilapia and rice and it was a big hit. The coconut oil left a hint of sweet coconut flavor. It was delish!

I have been substituting butter with coconut oil.(glad I made the switch, by the way!) I made fried eggs with my coconut oil, pancakes and more. I created two delicious recipes I would like to share with you.

Recipe #1~ Coconut Chicken with Onions


Ingredients
  • 1 lb boneless, skinless Chicken Thighs, cut into small pieces
  • 1 med Onion, thinly slices
  • 1/2 cup Worcestershire
  • 2 tbs Soy Sauce
  • 2tbs Coconut Oil
  • pinch of Salt
  • pinch of Pepper
  • pinch of Adobo
Easy Cooking Instructions
  • Melt Coconut Oil in large saucepan
  • Add Chicken and all other ingredients
  • Cook on Medium-High heat for 20 minutes stirring occasionally
  • Cover and simmer for 10 minutes
  • Serve on white rice
I am very happy with how this meal turned out. I love adding my coconut oil to my dishes because I love the hint of coconut it leaves in the flavor. Absolutely delicious!

Recipe #2~ Vanilla Coconut Pancakes with Strawberries


Ingredients
  • 2 cups easy pancake mix ( I used Hungry Jack)
  • 1 & 1/4 cups water
  • about 3 tbs Coconut Oil
  • 1/4 cup Vanilla Syrup ( I used Davinci)
  • 4 Large Strawberries
Super Easy Cooking Instructions
  • Mix together pancake mix, water and syrup
  • Heat Coconut Oil in a large saucepan
  • Pour pancake mix into pan to create desired size pancake
  • Repeat steps 2 and 3 until all pancake mix is finished
  • Once all pancakes are finished, top with diced strawberries
With the above recipes, I have created two new favorites in this house. Thanks to Tropical Traditions and their delicious Coconut Oil! Now that I have tried this amazing oil, I know why all of their reviews are great ones! I am looking forward to trying more of their products!

Mexican Chicken Soup *Recipe*

Mexican Chicken Soup
This is what we ate for dinner tonight and it was Oh So Good!! If you are looking for a super-easy-to-make dinner that tastes delicious, you will find that in this meal!

Ingredients
1 15oz can of diced tomatoes(Mexican-style, if possible)
8oz canned black beans(about half a can)~drained,rinsed
2 cups frozen corn OR 1 15oz can of corn~drained
2 cups Chicken Broth
1/2 tsp garlic powder
1 tsp chili powder
1 tsp ground cumin(optional)
3/4 tsp pepper
4 boneless,skinless chicken thighs

Directions
  1. Add tomatoes, beans, corn, broth, garlic, chili powder, cumin(if desired), and pepper in large saucepan.
  2. Remove and discard any visible fat from chicken. Cut into large chunks and add to the saucepan. Heat to boiling, reduce heat and simmer, covered, for 20 minutes, or until chicken is tender.
  3. Remove the chicken and place on plate; use forks to shred the chicken. Return the shreded chicken to soup.
  4. Serve with tortilla chips.
